I do not know many people that do not like pasta. Actually, my husband happens to be the only person I know. If you are anything like me, pasta is a treat. As much as I love pasta, I usually get a stuffed feeling, followed by sleepy, and not to mention the load of carbs and calories. Thanks to Fritz over at Instagram @fritzness_ for sharing his fabulous food, I discovered guild free pasta by Modern Table Meals. I bought it at Target to try it and see what it is all about. The first one I tested is the Lentil Penne, which according to the nutrition on the box has 20g of protein and 6g of fiber per 100g serving and does not have any artificial preservatives. Well, it was amazing. I did not feel heavy after eating it, and I felt satisfied for a long time. I am so excited about it I decided to share this simple recipe with you all. - 1 box of Lentil Penne Pasta
- 1 package of Gardein Meatless Meatballs (found in the frozen section)
- 1 ½ of vegetable broth (I used protein vegetable broth)
- 2 garlic cloves chopped
- 2 cups of finely chopped kale
- 1 tablespoon of sundried tomato pesto sauce
- 1 tablespoon of flour
- 1 tablespoon of olive oil
- Salt and pepper
Cook pasta according to instructions on the box, drain and set aside. In a skillet, heat olive oil, add garlic and kale. Sauté on medium heat stirring often. Add a tablespoon of pesto, stir, then add flour. Pour in vegetable stock. Stir well into a creamy sauce. Add meatballs, lower heat and simmer for 15 minutes. Season to your taste and add pasta, mix well and serve. Garnish with basil or parmesan cheese.
